The pasta is made from durum wheat varieties grown at high altitudes and ground at low temperatures between the round stones of the stone mill. Followed by an ancient family recipe: they open a big embrace to use the finest and purest ingredients that give the pasta a unique flavor and color. The pasta is shaped by hand and made in small batches. It is dried at room temperature and not in a heat dryer to preserve all the vitamins and flavors of the Greek countryside.
